Repeated thinning and grape quality control during grape maturing on the vine reduces vintages to 30% to 50% of that allowable under DOCG regulations. Thus at the time of harvest only the highest quality grapes are left. The Estate utilizes a mix of traditional and modern farming, cultivating, harvesting and aging techniques to preserve the land’s history yet still produce a superior product. The great beauty of the area has led to find new solutions that are not invasive of the land.

THE VINES
To produce the quality grapes, the Estate only plants 5,200/6,000 plants per hectare, thinning out and harvesting by hand, for a maximum production of 60 quintals per hectare. 
The vines grown “a cordone speronato” and pruned short, a modern technique that produces the best yield from the clayey, calcareous, soils. 
A sizeable 35 hectares selected from 90 hectares of the property in the heart of the zone of the “Disciplinare” – they cultivate the traditional Prugnolo Gentile, along with other red grape varieties: Merlot, Syrah, Cabernet Franc. They are also experimenting an autochthonous variety: Pugnitello.

They also have  international vines that used to make a new line of varietals including , IGT Toscana Merlot, IGT Toscana Cabernet Sauvignon and IGT Toscana Syrah. These vines are combined with the  Super-Tuscan main crop to create a sublime synthesis of ancient and modern vines, that is worthy of the territory and its extraordinary richness. 

Vinification and maturing take place in an underground state of the art factory, where great respect both for the raw materials and for the land that bears them is united. In addition to the wines, they also produce from the harvest of the Nobile, the Grappa Riserva, which has a warm velvety flavor and Vinsanto in keeping with the traditions of the land.

OLIVES
The olive trees are cared for with great dedication, and produce an Extra-Virgin Olive Oil with an extremely low acidity, delicate and perfumed, with just the right fruitiness.

In Italy, Sangiovese is the most widely planted red grape variety. It is an officially recommended variety in 53 provinces and an authorized planting in an additional 13. It accounts for approximately 10% of all vineyard plantings in Italy with more than 100,000 hectares planted to one of the many clonal variations of the grape. 
Throughout Italy it is known under a variety of names including Brunello, Morellino, Nielluccio and Prugnolo Gentile. It is the main grape used in the popular red wines of Tuscany, where it is the solitary grape of Brunello di Montalcino and the primary component of the wines of Chianti, Vino Nobile di Montepulciano and many &quot;Super Tuscans&quot;. 
Outside of Tuscany, it is found throughout central Italy where it places an important role in the Denominazione di Origine Controllata e Garantita (DOCG) wines of Montefalco Sagrantino secco and Torgiano Rosso Riserva in Umbria, Conero in Marche and the Denominazione di Origine Controllata (DOC) wines of Lazio and Rosso Piceno in Marche.
